Join Executive Chef and Co-Owner of LA’s acclaimed Otoño restaurant, Chef Teresa Montaño, for an exquisite voyage from the coastal cornucopia of Basque Country to the legendary DOCa vines of La Rioja. Together we’ll explore the robust culinary heritage of Euskadi from its rustic fishing origins and tradition of the asador,
to the family farms and star-studded kitchens defining Basque Country’s gastronomic future. Our voyage will continue as we venture to the iconic Tempranillo terroir of Rioja, from the Alavesa to the Alta, to sip luscious reds and explore the fabled bodegas of this winemaking paradise of the Ebro River Valley.

We will begin our epicurean expedition through Euskadi with arrival to the rendezvous points, Bilbao Airport and Bilbao-Abando Train Station, and a warm welcome by our Palatum Host. We’ll set off for our chic, five-star San Sebastian stay, Akelarre Hotel created by Chef Pedro Subijana and family, before toasting to the start of our journey with a traditional Basque aperitif and a welcome by Chef Teresa Montaño. Tonight’s celebration will continue with an exclusive dining experience at Three Michelin Star Akelarre Restaurant. (Meals: D/Overnight: Akelarre Hotel)
Today we’ll admire splendid views of La Concha Bay before taking in the sights and sounds of San Sebastian with a guided exploration of Old Town. Our lunch will be an homage to Basque Country’s culinary heritage reimagined as an inventive tasting menu at one of the region’s most acclaimed “World’s 50 Best Restaurants.” The afternoon will be left free for shopping or luxuriating at the Akelarre Spa, before traveling to one of San Sebastian’s trendiest districts for a tasting tour through its local’s only pintxos bars. The morning will lead us to the Basque Highlands to discover its artisan Idiazabal cheese making traditions at a rustic cheese farm, before sipping effervescent Txakoli vintages while overlooking the sea at the family estate of a small batch producer. We will next meet Chef Aitor Arregi of Michelin-starred Restaurant Elkano for an introduction to ancient Basque fishing traditions, followed by a special sea to plate dining experience for lunch. This evening a local chef, renowned for their expertise in Basque cuisine, will welcome us to a convivial culinary experience at an invite-only Gastronomic Society. After check-out, we’ll depart for the vibrant city of Bilbao to experience the Mercado de la Ribera, Europe’s largest covered market, before embarking on a docent-led exploration of the the Guggenheim Bilbao Museum, designed by architect Frank Gehry. From Bilbao we’ll travel to our sumptuous Rioja stay along the Rio Ebro, Palacio Tondón, a former 16th century palace turned sophisticated four-star hotel. The afternoon will be spent appreciating the terroir of Rioja Alavesa, starting with a vineyard picnic and vertical tasting of Reservas and Gran Reservas at an iconic, fifth generation producer. We’ll enjoy free time to peruse the historic bodegas of an idyllic medieval village before crowning the afternoon with a special barrel tasting paired with stunning views at a fabled bodega. Dinner will be an elegant introduction to the traditional flavors of Rioja Alavesa, hosted at the Frank Gehry designed City of Wine complex. (Meals: B, L, D/Overnight: Palacio Tondón)
Today we will sip our way through the wine traditions of Rioja Alta, starting with a horse drawn carriage ride through the vineyards and a tasting flight of historic vintages at the bodega of an innovative producer. Lunch will be a contemporary ode to Riojan cuisine followed by free time to discover a fabled wine town at the heart of La Rioja. In the afternoon, we’ll enjoy an exclusive visit to the private aging cave of an esteemed 100 point winemaker for a tasting flight of their covetable Tempranillo vintages. Tonight we will raise a glass to our epicurean expedition together with a private dinner of gastronomic bites with wine pairing at the 19th century estate of a legendary Rioja winemaking dynasty. This morning we will check-out from Palacio Tondón and depart for our scheduled drop-offs at Bilbao Airport and Bilbao-Abando Train Station, signaling the end of tour. (Meals: B)

CHEF TERESA MONTAÑO
Teresa Montaño is a New Mexico-born, Los Angeles-based Chef, best known for her modern Spanish cuisine. Teresa’s contemporary perspective on Spanish cuisine integrates creative use of technique and ingredients rooted in Californian sensibility, seasonality, and aesthetic. With roots in the organic food industry and time at local organic farms and the Tender Greens opening team, Teresa developed a strong sense of stewardship towards the environment and sustainable business practices.
An exploratory tour of Europe which included research in Copenhagen, Denmark, Barcelona and Valencia as well as pop-up concepts in Puglia, Italy, inspired Teresa to bring Otoño to life in Los Angeles. Her first restaurant, Ración, was highly lauded by acclaimed food writers and critics, alike, including Jonathan Gold, Amy Scattergood, and Besha Rodell, to name a select few. The restaurant was included in the celebrated LA Times 101 Best Restaurant for the entirety of Teresa’s tenure. Ración also received multiple accolades from LA Weekly and LA Magazine, and recognition on the Diner’s Club World’s 50 Best Restaurants Discovery Series.
