Our epicurean odyssey to Mallorca will begin with arrival to our rendezvous point, Palma de Mallorca Airport, where we’ll be welcomed by our Palatum Trip Leader. At designated times, we’ll depart for the island’s sparkling seaside capital, Palma de Mallorce, for check-in to our chic five-star stay, Es Princep, a Leading Hotel of the World just minutes from the Casco Antiguo. We’ll have free time to settle into our sophisticated retreat before kicking off tonight’s welcome celebration with craft cocktails and freshly carved Jamón de Bellota hosted atop Es Princep’s posh Rooftop. The celebration will continue as we toast to our hosts, Neilly Robinson and Chef David Viana, while savoring a gastronomic exploration of the Balearic Islands at legendary Michelin-starred restaurant, Zaranda, by Chef Fernando Pérez Arellano.

Our first morning in Mallorca will be spent uncovering the culinary secrets of this Balearic isle of plenty, starting with a guided visit of the fabled Mercat de l’Olivar, a tapestry of taste traditions that remains the epicurean soul of the city. We will peruse the market’s delectable offerings while procuring a handpicked bounty of typical island ingredients before venturing to a signature culinary space dating back to the 1600s, where the food, history and culture of Mallorca are honored in each expertly crafted plate. We’ll roll up our sleeves for a private cooking experience to learn the art of preparing local Mallorquin and other Iberian inspired recipes before enjoying a lunch of our handmade dishes. Our day will continue at the Es Baluard Museum of Modern and Contemporary Art for free time to explore its expansive collection of more than 800 works from such artists as Picasso, Miró and Barceló, displayed from an iconic setting along the 16th century bastion of Sant Pere overlooking the Bay of Palma. The afternoon will next lead us to the sacred symbol of the city, the 13th century Cathedral of Mallorca, a Gothic wonder rising above Palma’s walls. We’ll appreciate the cathedral’s architectural beauty punctuated by 20th century renovations designed by Antoni Gaudí and the stunning Santísimo Chapel reimagined by artist Miquel Barceló. Tonight will be a culinary quest through the Casco Antiguo as we savor a mosaic of typical Balearic delicacies from ensaimadas and artisan confections to sobrasada, Mahón-Menorca cheese and other tasty tapas

An exquisite day of sun, sea and seafood awaits us on the third day of our glorious adventure to Mallorca. We’ll soak up the sun poolside and swim in the crystalline Mediterranean waters of a hidden cala (cove) while luxuriating at one of the island’s most exclusive beach clubs. From our privileged seaside hideaway we will experience maximum sunkissed bliss with reserved sunbeds, umbrellas and full access to club amenities, before savoring a lunch of sea to table fare. We’ll return to our hotel relaxed, rejuvenated and ready to enjoy a free evening at our leisure.

Today we bid farewell to our chic Palma stay and set off to uncover Mallorca’s boutique winemaking heritage while exploring its oldest and most important Denominations of Origin, Binissalem and Plà i Llevant. Our morning will begin with a private visit to Ca’n Verdura, the micro-winery of Tomeu Llabrés, a winemaker whose artisan approach remains rooted in the island’s agrarian legacy and passion for native varietals honors the Binissalem terroir, which his family has been cultivating for six generations. During our exclusive visit we will learn how Tomeu uses polyculture farming and low intervention techniques in his old-vine vineyards, and his approach to crafting small batch wines that tell the tale of his ancestral lands. Our visit will culminate with a tasting of Ca’n Verdura’s acclaimed reflections of the Binissalem DO featuring such native island varieties as Mantonegro, Callet and Giró Ros. We will continue to the Plà i Llevant DO for a welcome to the estate of Barbara Mesquida Mora, leader of a new generation of vintners whose fresh approach to indigenous varietals is redefining Mallorcan winemaking. Member of a renowned family of vintners who have been cultivating vines on the island since the 1940s, Barbara set out to create something completely new, transforming historic family vineyards once planted with foreign varietals into a biodynamic paradise where indigenous grapes like Parellada, Premsal and Callet represent the future of her vision. A visit to Mesquida Mora’s iconic Son Porquer vineyard awaits as we learn more about Barbara’s innovative approach to biodynamic farming and how, informed by the island’s past, she is boldly reshaping Mallorcan winemaking as a showcase for indigenous varieties. From the vine to the glass, our visit will be crowned with a tasting of Mesquida Mora wines accompanied by a wine country inspired lunch. The afternoon will see our arrival to the splendid Serra de Tramuntana village of Valldemossa for free time to explore its lovely cobblestone streets accented by 17th century houses and punctuated by the Palace of Rei Sanç, once host to composer Frederic Chopin and writer George Sands. Our journey into the Tramuntana will continue with a special experience hosted in the olive groves of a 500 year old finca where we’ll set off for an exhilarating drive through the estate aboard vintage vehicles. We’ll sample the finca’s Extra Virgin Oli de Mallorca DO and artisan gins before concluding our estate adventure with a traditional Mallorcan style picnic. The evening will see us checking-in to our sumptuous Deià hideaway, Belmond La Residencia, with free time for settling in and swooning over our five-star Tramuntana setting.

This morning we will travel to the verdant slopes of the Serra de Tramuntana for an introduction to Mallorca’s agricultural past and future at an organic finca where regenerative farming and the preservation of the island’s agrarian heritage are the soul of the project. Surrounded by the enchanting backdrop of the finca’s traditional stone farmhouse and the Tramuntana foothills, we’ll appreciate a guided visit of the farmstead, including its biodynamic gardens where local fruit and vegetable varieties have been planted alongside others from across the globe, and heirloom varieties that were once forgotten are being brought back to life. After harvesting treasures from the garden, a field to fork cooking class awaits as we learn how to prepare a series of produce forward dishes before delighting in a convivial al fresco lunch of our delicious creations. From the fields to the sea, our next stop will be the ancient town of Alcúdia, onetime Roman stronghold of the island, nestled along Mallorca’s northeastern shores. We will step back in time as we meander along the city’s medieval walls, built to protect its jewelbox center, the Old Town, a stunning assemblage of medieval and Renaissance architecture. Free time will be ours to peruse the many artisan shops and charming cafes that pepper Alcúdia’s old walled center before continuing on to one of Mallorca’s most spectacular towns, Pollença, rich in history and offering vestiges from the island’s Knights Templar past. We’ll enjoy independent time to explore Pollença’s medieval nucleus of narrow lanes adorned by scenic 17th and 18th century stone houses, and punctuated by the lovely central square, the Plaça Mayor, buzzing with boutiques and dominated by the 18th century Esglèsia de Nostra Senyora dels Àngels. Tonight will be a Green Michelin Starred ode to the Mallorcan terroir at Ca Na Toneta, a seasonal temple of taste by sisters, Maria and Teresa Solivellas, culinary forward thinkers helping to preserve Mallorca’s native ingredients, unique food culture and a way of eating rooted in their island ancestry. Together we will savor a garden to gourmet feast showcasing strictly seasonal ingredients sourced from Ca Na Toneta’s own vegetable gardens and local artisan producers, prepared with finesse as soul satisfying creations of beautiful simplicity.

Our morning will begin as we salute the sun while marveling at exquisite views of the Deià coast at a former noble estate with some of the island’s most dramatic ocean views. The journey will continue as we arrive in the scenic village of Sóller, suspended between the sea and the mountains in what is referred to as the “Valley of Gold.” A guided introduction to the lovely center of town will acquaint us with Sóller’s unique history as a hub for orange cultivation and its intriguing legacy of design and architecture, a blend of medieval Mallorcan, Art Nouveau and Modernisme. Free time will offer us a leisurely moment to discover the scenic riches of Sóller, including Plaza de la Constitución, the town’s vibrant heart pulsating with the rhythm of day to day life, from the bustle of cafes and shops selling wares to the rattling of an antique wooden tram traveling to Port and the sun glowing across the Gothic facade of Sant Bartomeu church. Lunch will lead us to the Port of Sóller where an intoxicating blend of sea, sun and sand awaits at one of the area’s most coveted beachside settings who will host us for a relaxed yet elevated epicurean experience centered around 0km ingredients and seaviews. Our return to Belmond La Residencia will signal blissful free time to while away the rest of the day enjoying our hotel’s plush amenities, including two outdoor swimming pools, an award winning spa, indoor pool, sauna and jacuzzi, fitness center, tennis courts, art gallery, and complimentary shuttle service to nearby Cala Deià for a dip in the sparkling sea. In the evening we will gather to raise a glass to Neilly and David and our expedition through Mallorca during a convivial closing dinner with Deià and the Tramuntana as our stunning backdrop.

DAVID VIANA, EXECUTIVE CHEF

David was born and raised in Little Lisboa: Newark, New Jersey’s Portuguese immigrant community. Growing up, he spent afternoons with his grandmother, Isaura, who introduced him to many of the dishes that grace Lita’s menu today. 

He turned his early love of food into a storied career, rising through the ranks at Mesa Grill, Eleven Madison Park, Marea and Villa Joya in Portugal. He joined the team at Heirloom Kitchen in 2016, where he received three-and-a-half stars from The Star-Ledger within weeks. In 2018 he was nominated as Best Chef Mid Atlantic by The James Beard Foundation, shortly before competing on Top Chef’s 16th season. David has been nominated as a 2025 Semifinalist for Best Chef Mid Atlantic by the James Beard Foundation. 

In addition to leading the culinary helm at Lita, he is the Executive Chef at Heirloom Kitchen and  Heirloom Kitchen at The St Laurent. When he’s not working he is spending time with his son, Cole, teaching him to make fejauda and taking him to Chuck E Cheese.

Neilly is the Managing Director of Lita, Heirloom Kitchen and Heirloom Kitchen at The St Laurent. 

A self taught entrepreneur, Neilly founded Heirloom Kitchen–the group’s first restaurant–in 2013 with her mom, Judy. Growing up, their family dinner table was always beautiful and bountiful. So, after a decade working in fashion in New York City she decided to return to her Jersey roots, creating a restaurant and cooking school. Now celebrating its 10th anniversary, Heirloom Kitchen has grown into one of the east coast’s most beloved restaurants, with Chef David Viana leading the kitchen. 

In the summer of 2022, on the heels of a wildly successful pop up in Philadelphia, Neilly and David launched Heirloom at The St. Laurent in Asbury Park: an upscale restaurant and bar in a restored historic hotel. Lita is the duo’s third concept. 

Neilly supervises everything across Heirloom Hospitality. She oversees people and culture, marketing and creative, and number crunching, all the while ensuring that no detail gets overlooked.  

When she isn’t working she’s busy researching where she’s traveling to next!

The group rendezvous point for the start of the tour is Palma de Mallorca Airport. It is strongly recommended that you arrive in Palma de Mallorca one or two days prior to the commencement of the tour, to allow for any delays or rerouting that may occur while in transit to Spain. For the convenience of all arriving guests, a series of group transfers will be scheduled to depart from Palma de Mallorca Airport with transport to Es Princep, starting at 7:30 AM until approximately 5:00 PM on September 17th, 2025. Please note that all participants will need to arrive between 7:30 AM and 5:00 PM on September 17th, 2025 to take advantage of the group transfers to Es Princep in Palma de Mallorca. Participants who choose to arrive earlier or later than the outlined group transfer times can contact The Palatum about private transfer options, which can be arranged at an additional cost.

The Palatum has crafted this exclusive epicurean tour to highlight seasonal vinicultural and gastronomic experiences of the highest caliber. As this tour has been specially designed to take you off the beaten path and introduce you to authentic local food and wine experiences, it may require that necessary adjustments be made to the tour schedule either prior to departure or during the tour. Rest assured, we will make every effort to provide you with the touring experience outlined in the itinerary. Please be advised that we cannot provide refunds for any touring days, activities, excursions, tastings, etc., that you have chosen not to participate in, or any costs associated with opting out of a planned activity or excursion (i.e. taxi or bus fare).

If you cancel by or before February 28th, 2025: You will receive a 100% refund of your paid deposit minus a $500 processing fee.

If you cancel between March 1st, 2025 and April 30th, 2025: You will receive a 50% refund of your paid deposit.

If you cancel between May 1st, 2025 and June 30th, 2025: You will receive a 25% refund of your paid deposit.

If you cancel after June 30th, 2025, all monies paid will be non-refundable.

Palatum tours feature the full-time assistance of a Palatum Trip Leader, as well as select touring with local guides and experts in gastronomy and oenology.

Every Palatum tour is designed to celebrate the culinary traditions, seasonal produce, and local food products that make the regions being visited, such diverse gastronomic destinations. During the tour you will enjoy a wide variety of gourmet foods, as well as both typical and creative dishes, intended to delve deep into the authentic food landscapes we will be exploring. This means that you can look forward to sampling regional delicacies that highlight a cornucopia of ingredients, from the familiar to the unfamiliar. As culinary experiences and organized meals are planned well in advance, it is important that you advise The Palatum of any food allergies and/or dietary restrictions you may have, so that we can do our very best to meet your needs.

You can look forward to receiving an online link to your digital Palatum Portfolio approximately two weeks prior to departure. Your digital Palatum Portfolio will include the final, detailed tour itinerary, providing a more granular portrait of your travel experience, including daily touring schedules with times and all pertinent details, as well as other supplemental travel information, such as weather resources, emergency contact information, and other useful travel tips.

An amuse-bouche for the feast that awaits, your Palatum Welcome Package will include some gourmet surprises to get you dreaming about your upcoming trip, which will be mailed out to arrive prior to your departure on the tour. Once shipped, you will be notified via email and provided with the tracking number for your package.

Today’s travel landscape offers many resources available for booking airfare. As such, we encourage you to explore your options, such as booking your airfare through a trusted ticketing agent, an online airline resource, or using your frequent flier miles or credit card rewards points. As you research your preferred flights, you will want to review your pre-tour and post-tour travel plans, and select airline routes that make sense logistically with regard to the start and end dates of the tour.

All Palatum tours require a valid passport, with a minimum 6 months validity. As visa and entry requirements can vary from country to country, and change with little or no notice, it is your responsibility to contact your local embassy or consulate for the most up-to-date visa requirements, and to carry the proper travel documents.

Each tour participant is allowed a total of one medium sized suitcase (25” to 27” inches) and one standard carry-on. Please note that this luggage allowance will be strictly enforced, as the size of the tour vehicle will only accommodate the set number of tour participants and the outlined luggage allowance per participant. Any deviation from the outlined luggage allowance will result in unnecessarily cramped tour bus conditions.
