Our autumn sojourn through Provence begins with arrival at Marseille Airport, where a chauffeured drive carries us through the patchwork hills of the Luberon and the Alpilles to our countryside retreat at Le Mas de la Rose in Orgon. Once checked in at this restored 17th-century Mas (farmhouse), there is time to exhale, wander the gardens, or simply settle into your room before the week ahead. As evening falls, we gather in the estate’s enchanting garden for a welcome apéritif, where a local winemaker from the surrounding Alpilles pours a flight of rosé and introduces the nuances of the region’s signature vintage. We close the day with a convivial welcome dinner: a multi-course ode to elevated Southern French flavors and seasonal bounty, prepared by a local chef and savored under the Provençal sky.

The day begins gently with a light breakfast at the Mas, just enough to prepare us for the pleasures ahead while leaving room for what is to come. Our morning is devoted to the art of the French petit-déjeuner as a local chef leads us through crafting artisan-style baguettes, flaky pains au chocolat and a seasonal fruit preserve. We close the class with a leisurely brunch of our own creations, enjoyed alongside fragrant teas and creamy café au lait, before a stretch of free time to relax and unwind.
In the afternoon, Provence’s softer hues take center stage as a noted local artist guides us through a watercolor session inspired by the surrounding countryside, with olive trees, stone walls and shifting light becoming our subjects. As day turns to dusk, canapés and other light bites are served by the pool, setting an easy, convivial tone before we sit down to a casual dinner prepared by the estate chef, a laid-back salute to the season’s finest local produce.

After breakfast at the Mas, we set off for the wine country near Aix-en-Provence where the gentle rise of vineyard hills and the clarity of the Provençal light create the ideal setting for a private tasting. A member of the estate team guides us through a gourmet flight of the estate’s most prized expressions of Provence, spotlighting the grapes that define the region’s rosés: Grenache and Cinsault for brightness, Syrah and Mourvèdre for depth, and the unmistakable imprint of the surrounding terroir.
From here, we continue into the historic heart of Aix for a guided exploration of its celebrated food culture. Together we visit an artisan boulangerie, a traditional cheesemonger, a boutique chocolatier and a patisserie known for its exquisite Calissons d’Aix, tasting as we go and learning the stories embedded in each craft. The afternoon offers time to wander at your own pace, whether shopping for culinary finds, visiting a museum or simply enjoying the pleasures of café life.
As evening settles over the city, we gather for a true bistro-style dinner that celebrates seasonal Provençal cooking and the warm conviviality that defines the region.

After breakfast at the Mas, we set off with our chef for the center of Saint Rémy de Provence, where market day fills the town with color, fragrance and the vibrant rhythm of local life. Together we explore the stalls and select the freshest ingredients for the dishes we will prepare later in the day, followed by a bit of free time to browse independently and enjoy this celebrated Provençal market at your own pace.
Returning to Le Mas de la Rose, we gather in the kitchen for a hands-on class devoted to classic regional recipes. Guided by our chef, we transform our market finds into a seasonal feast and then sit down together to enjoy the fruits of our work in the comfort of the estate. The afternoon invites time for rest and relaxation before the next sensory experience begins.
In the late afternoon, we are welcomed by an artisan perfumer who introduces the foundations of French fragrance making. During a custom blending session, we craft personal scents inspired by the flora of the countryside and gain insight into the traditions that shape this refined art form. The day concludes with an apéro-style dinner featuring savory small bites and boutique regional wines, shared in a warm and convivial atmosphere.

The morning begins with coffee, tea and fresh juices to gently awaken the senses before our early wellness experience. We salute the day with a restorative yoga session held in the open air, followed by a lush sound bath that encourages deep relaxation and harmony between body and mind. After breakfast at the Mas, there is time to prepare for our day of exploration in the Luberon.
Our first visit brings us to the countryside near Oppède for a tasting at a historic olive mill, where we learn how olives are transformed into the region’s signature oils and sample varieties that reflect the character of the surrounding groves.
From here, we continue to Roussillon for a guided walk through its colorful historic center, a village known for the ochre that tints its cliffs and buildings in warm hues.
The afternoon carries us to the storybook village of Gordes for a leisurely guided stroll, followed by free time to explore its charming lanes and panoramic viewpoints. As the sun begins to lower over the Luberon, we gather for our closing dinner, a sophisticated celebration of Provençal cuisine served with sweeping sunset views across the valley. It is a fitting finale to a week steeped in seasonal flavor, shared discovery and the spirit of autumn in Provence.

Afterward, we gather our luggage and say farewell to the estate that has been our home throughout the week. Chauffeured transfers return us to Marseille Airport, marking the close of our journey and carrying us forward with memories of shared meals, vibrant markets and the gentle beauty of autumn in Provence.

Le Mas de la Rose is a seventeenth-century hamlet reimagined as an intimate country retreat, set within a private park of olive groves, lavender and cypress. Chef Fabien Taguemount
Chef Fabien Taguemount is the culinary force behind Le Potager du Mas at Le Mas de la Rose, where his menus begin in the estate’s gardens and follow the Provençal seasons with quiet precision. Guided by classical technique and an ingredient-first philosophy, he lets just-picked vegetables, sun-warmed fruit, and fresh herbs set the rhythm of each dish, then layers in thoughtfully sourced meats, seafood, and local specialties without ever overpowering their character. On the plate, his cooking feels refined yet generous, with flavors that stay clean, vivid, and unmistakably of place. It’s the kind of meal that lingers in the memory because it’s both beautifully crafted and genuinely welcoming, shaped by a chef who sees hospitality as part of the art.
Thiéblin family from Château Paradis
Xavier and Odile Thiéblin have shaped Château Paradis through a clear, deliberate vision since taking the helm in 2011. Drawing on deep Provençal roots and a lifelong relationship with wine, they transformed the property from cooperative production into a true estate, carefully restructuring the vineyards and expanding across select parcels between Sainte-Victoire and the Luberon. Their work is defined by rigorous attention to soils, exposure, and seasonal rhythm, paired with a cellar philosophy that favors freshness, balance, and clarity of expression. Under their guidance, wines like the acclaimed Terre des Anges rosé have earned international recognition, reflecting a house style that is precise, confident, and unmistakably of place.
Nibbio Family from Moulin Saint Augustin
The Nibbio family is widely respected for their mastery of traditional Provençal olive oil making, a reputation built through decades of hands-on work rather than shortcuts or scale. When they took on Moulin Saint Augustin in 1980, they committed to restoring both the historic mill and the demanding craft it houses. Frédéric Nibbio grew up in the groves and at the press, learning to read the land alongside his parents and grandparents through each harvest. Since reopening the mill as an olive oil producer in 2001, he has become the family’s maître moulinier, producing oils from the local Aglandau variety that are prized for their clarity, balance, and expressive character. Guided by organic and reasoned agriculture, the family’s work stands as a benchmark in the region, where patience, precision, and place define every drop.

The rendezvous point for the start of the tour is Marseille Airport. A chauffeured pick-up will be organized for participants as they arrive at the designated airport, with transfer to Le Mas de la Rose in Orgon. It is strongly recommended that you arrive in the South of France one or two days prior to the commencement of the tour, to allow for any delays or rerouting that may occur while in transit to France. Please note that all participants must arrive at Marseille Airport on October 4th, 2026 to take advantage of the included chauffeured transfer to Le Mas de la Rose in Orgon. In accordance with the scheduled welcome activities on October 4th, 2026, it is recommended that you book a flight that arrives at the airport no later than 2:30 PM.

The end date of the tour is October 9th, 2026 with chauffeured drop-off at Marseille Airport. A chauffeured transfer from Le Mas de la Rose in Orgon to Marseille Airport will be organized for participants in accordance with their departing flight details. If you are planning to depart from Marseille Airport on October 9th, 2026 we would strongly recommend that you book a departing flight that leaves no earlier than 9:30 AM, to account for Le Mas de la Rose’s check-out policy and to allow for ample time following your chauffeured drop-off.

The Palatum reserves the right to decline any Participant whose condition, in The Palatum’s opinion, may negatively affect the health or safety of that Participant, other Participants, our staff/agents, or third parties.
The Palatum has crafted this exclusive epicurean tour to highlight seasonal vinicultural and gastronomic experiences of the highest caliber. As this tour has been specially designed to take you off the beaten path and introduce you to authentic local food and wine experiences, it may require that necessary adjustments be made to the tour schedule either prior to departure or during the tour. Rest assured, we will make every effort to provide you with the touring experience outlined in the itinerary. Please be advised that we cannot provide refunds for any touring days, activities, excursions, tastings, etc., that you have chosen not to participate in, or any costs associated with opting out of a planned activity or excursion (i.e. taxi or bus fare).
If you cancel by or before March 1, 2026: You will receive a 100% refund of your paid deposit minus a $500 processing fee.
If you cancel between March 2, 2026 and May 15, 2026: You will receive a 50% refund of your paid deposit.
If you cancel between May 16, 2026 and July 1, 2026: You will receive a 25% refund of your paid deposit.
If you cancel after July 1, 2026 all monies paid will be non-refundable.

Every Palatum tour is designed to celebrate the culinary traditions, seasonal produce, and local food products that make the regions being visited, such diverse gastronomic destinations. During the tour you will enjoy a wide variety of gourmet foods, as well as both typical and creative dishes, intended to delve deep into the authentic food landscapes we will be exploring. This means that you can look forward to sampling regional delicacies that highlight a cornucopia of ingredients, from the familiar to the unfamiliar. As culinary experiences and organized meals are planned well in advance, it is important that you advise The Palatum of any food allergies and/or dietary restrictions you may have, so that we can do our very best to meet your needs.
You can look forward to receiving an online link to your digital Palatum Portfolio approximately two weeks prior to departure. Your digital Palatum Portfolio will include the final, detailed tour itinerary, providing a more granular portrait of your travel experience, including daily touring schedules with times and all pertinent details, as well as other supplemental travel information, such as weather resources, emergency contact information, and other useful travel tips.
An amuse-bouche for the feast that awaits, your Palatum Welcome Package will include some gourmet surprises to get you dreaming about your upcoming trip, which will be mailed out to arrive prior to your departure on the tour. Today’s travel landscape offers many resources available for booking airfare. As such, we encourage you to explore your options, such as booking your airfare through a trusted ticketing agent, an online airline resource, or using your frequent flier miles or credit card rewards points. As you research your preferred flights, you will want to review your pre-tour and post-tour travel plans, and select airline routes that make sense logistically with regard to the start and end dates of the tour.
All Palatum tours require a valid passport, with a minimum 6 months validity. As visa and entry requirements can vary from country to country, and change with little or no notice, it is your responsibility to contact your local embassy or consulate for the most up-to-date visa requirements, and to carry the proper travel documents.
Each tour participant is allowed a total of one medium sized suitcase (25” to 27” inches) and one standard carry-on. Please note that this luggage allowance will be strictly enforced, as the size of the tour vehicle will only accommodate the set number of tour participants and the outlined luggage allowance per participant. Any deviation from the outlined luggage allowance will result in unnecessarily cramped tour bus conditions.
